INGREDIENTS
- 2 dozen fresh chicken wings
- Your favorite BBQ rub (we use Kreiser Barbecue's Old Stool AP)
- Your favorite BBQ sauce
INSTRUCTIONS
1. Dry the wings off with some paper towels. Dryer wings tend to crisp up better.
2. Season liberally in a pan at least 1 hr before cooking and make sure all sides get covered with rub
3. Set your smoker up for a hot side and an indirect side at 300°F. (On our YS640S, We remove the Access Door from the diffuser plate and set the temp to 300°F)
4. Put the wings on the far side of the smoker where it is away from the open flame and direct heat
5. Let the wings cook for about 10 minutes until they start to color up and then flip them
6. Continue to cook indirect until the internal temp of the wings are 120-140°F
7. Move the wings to the hot side of the smoker and turn up the temp. (We turn up the YS640s to 500°F )
8. Sear the wings flipping them a few times and move them around over the direct heat. Continue to sear until they probe about 175-185°F
9. Remove from the smoker and glaze with your favorite sauce
10. Reduce the heat and return the sauced wings to the smoker on the indirect heat side for about 10 minutes
11. Enjoy!
